Pot Roast & More on the Big Green Egg
It was a great day out today, so I figured I would do some cooking on the Big Green Egg . The primary cook was 10 lbs of Beef English Roast that were made into a Pot Roast with Roasted ******* Potatoes, Carrots, Mushrooms and Onions.
However, a Meatloaf and some Chicken Tenders managed to find there way to the Big Green Egg Too

Well, I figured I'd make a salad with the Chicken Tenders. So, once the tenders were grilled and coated with the Raspberry Chipotle Sauce, they were cut up and sauted with some more Raspberry Chipotle Sauce and cashews.
After the chicken and Cashews were sauted, I cut up some romaine lettuce and added a mix of the 5 blend bag lettuce. In addition I diced up some strawberries, sliced some grapes and prepared some mandarin oranges.
The chicken, cashew, lettuce, and fruit mix was all tossed with some Raspberry Walnut Vinegarette dressing
That turned out real well (The Mrs. was very happy )
